Description

This hearty Chicken Mole features tender chicken simmered in a flavorful broth and blended with corn chips, raisins, and aromatic spices. The sauce is finished with a touch of unsweetened chocolate for depth. Serve with brown rice and tortillas for a complete and satisfying meal.

Directions

  1. Melt the chocolate square.
  2. Bring water, chicken and celery to boil.
  3. Cover and reduce heat, letting simmer about 1 hour, or until meat comes away easily from bones.
  4. Remove chicken from broth and set aside to cool.
  5. Strain broth and keep liquid; discard celery.
  6. In a blender, combine half of broth with six seasonings, raisins, corn chips and onion.
  7. In a large frying pan, heat oil and add blended ingredients.
  8. Heat while stirring for 5 minutes.
  9. Add remaining broth, tomato sauce and melted chocolate to frying pan.
  10. Cover pan and simmer on low heat 20 minutes.
  11. Meanwhile, cut chicken into pieces; add to sauce in frying pan.
  12. Salt if desired.
  13. Cook everything together 10 minutes.
  14. Toast almond slivers and use as garnish.
  15. Serve with brown rice, steamed corn tortillas, and a green salad
