Its versatile nature allows it to shine in both casual brunches and formal dinner parties, offering a refined touch to any meal.Ingredients
Directions
-
Sterilize jars and lids by washing in hot soapy water and rinsing well, or running through a dishwasher cycle. Keep them hot until ready to fill.
-
In a heavy-bottomed saucepan, combine the fresh orange juice, Sauterne wine, and fresh lemon juice.
-
In a small bowl, mix 3/4 cup of the sugar with the powdered light fruit pectin until well combined and no lumps remain.
-
Whisk the sugar-pectin mixture into the wine and juice mixture in the saucepan.
-
Place the saucepan over high heat and bring the mixture to a hard, rolling boil, stirring constantly with a wooden spoon to prevent scorching.
-
Once boiling, stir in the remaining 2 1/2 cups of sugar.
-
Return to a full rolling boil that cannot be stirred down, continuing to stir constantly.
-
Boil hard for exactly 1 minute, stirring vigorously.
-
Remove the saucepan from heat and skim off any foam from the surface using a metal spoon.
-
Ladle the hot jelly immediately into the prepared hot jars, leaving 1/4 inch headspace.
-
Wipe the rims of the jars with a clean, damp cloth and seal with lids and bands. Process in a hot water bath canner for 10 minutes, or refrigerate for short-term storage.
