Description

This Orange Sauterne Jelly is a delicate and elegant dessert that captures the essence of summer in every bite. By combining fresh orange juice with the nuanced floral notes of Sauterne wine, this recipe creates a vibrant, translucent spread that is as beautiful as it is delicious. The addition of fresh lemon juice balances the sweetness, while powdered pectin ensures a perfect, firm set without needing long cooking times that can dull the fresh flavors. It serves beautifully as a standalone dessert, a luxurious topping for yogurt or ice cream, or even as a unique glaze for roasted meats. Simple to prepare with common pantry staples, this jelly is a fantastic gift idea or a special treat for holiday tables. Its versatile nature allows it to shine in both casual brunches and formal dinner parties, offering a refined touch to any meal.

Ingredients

Directions

  1. Sterilize jars and lids by washing in hot soapy water and rinsing well, or running through a dishwasher cycle. Keep them hot until ready to fill.
  2. In a heavy-bottomed saucepan, combine the fresh orange juice, Sauterne wine, and fresh lemon juice.
  3. In a small bowl, mix 3/4 cup of the sugar with the powdered light fruit pectin until well combined and no lumps remain.
  4. Whisk the sugar-pectin mixture into the wine and juice mixture in the saucepan.
  5. Place the saucepan over high heat and bring the mixture to a hard, rolling boil, stirring constantly with a wooden spoon to prevent scorching.
  6. Once boiling, stir in the remaining 2 1/2 cups of sugar.
  7. Return to a full rolling boil that cannot be stirred down, continuing to stir constantly.
  8. Boil hard for exactly 1 minute, stirring vigorously.
  9. Remove the saucepan from heat and skim off any foam from the surface using a metal spoon.
  10. Ladle the hot jelly immediately into the prepared hot jars, leaving 1/4 inch headspace.
  11. Wipe the rims of the jars with a clean, damp cloth and seal with lids and bands. Process in a hot water bath canner for 10 minutes, or refrigerate for short-term storage.
