  1. Clean the squid by grasping the head just below the eyes and pulling it away from the body. Remove the quill and internal organs, rinse the bodies thoroughly and reserve the tentacles.
  2. Finely chop the reserved tentacles.
  3. Heat part of the olive oil in a large skillet over medium heat. Saut� the onion until softened.
  4. Add the chopped tentacles and cook for several minutes.
  5. Stir in the rice, parsley, dill, pine nuts, mint, garlic, tomatoes and currants. Season with salt and freshly ground black pepper.
  6. Cook the filling until the rice is lightly coated and the ingredients are well combined.
  7. Loosely fill each squid body with the rice mixture, allowing room for the rice to expand during cooking. Secure the openings with toothpicks.
  8. Arrange the stuffed squid in a wide saucepan. Drizzle with the remaining olive oil and add enough water to come partway up the squid.
  9. Cover and simmer gently until the squid is tender and the rice is cooked, about 45 to 60 minutes, adding more water if necessary.
  10. Remove the toothpicks and serve warm with the cooking juices spooned over the squid.
