Parsley Jelly recipe image

Parsley Jelly is a unique and elegant condiment that bridges the gap between sweet dessert and savory accompaniment. This recipe transforms fresh parsley into a jewel-toned, translucent jelly, capturing the herb’s fresh, grassy notes while balancing them with the tartness of lemon juice and the sweetness of sugar. The result is a sophisticated spread that pairs beautifully with soft cheeses, charcuterie boards, or roasted meats. Its vivid green color makes it a stunning addition to any holiday table or special occasion dinner. While technically a fruit preserve due to the pectin, its herbal profile offers a distinct twist on traditional jellies, providing a refreshing palate cleanser or a flavorful accent to rich dishes.

Ingredients

Directions

  1. Wash and chop 3 bunches of parsley.
  2. Measure 4 cups of chopped parsley into a large bowl.
  3. Add 3 cups of boiling water to the parsley, cover, and let stand for 15 minutes to infuse.
  4. Strain the liquid through several layers of cheesecloth to remove all solids, pressing gently to extract maximum juice.
  5. Measure 3 cups of the strained parsley juice into a 6- to 8-quart saucepot.
  6. Add 2 tablespoons of lemon juice to the juice in the saucepot.
  7. Mix 1 box of SURE-JELL fruit pectin into the juice mixture.
  8. Place the pot over high heat and stir constantly until the mixture comes to a full boil.
  9. Immediately add 4 1/2 cups of sugar and stir vigorously.
  10. Bring the mixture to a full rolling boil that cannot be stirred down and boil hard for exactly 1 minute, stirring constantly.
  11. Remove from heat and skim off any foam with a metal spoon.
  12. Stir in a few drops of green food coloring if desired to enhance the color.
  13. Ladle the hot jelly quickly into hot jars, filling within 1/8 inch of the tops.
  14. Wipe the rims and threads of the jars with a clean, damp cloth.
  15. Cover with two-piece lids and screw bands on tightly.
  16. Invert the jars for 5 minutes, then turn them upright to cool.
  17. After 1 hour, check the seals to ensure they have set properly.
