Parsley Jelly is a unique and elegant condiment that bridges the gap between sweet dessert and savory accompaniment. This recipe transforms fresh parsley into a jewel-toned, translucent jelly, capturing the herb’s fresh, grassy notes while balancing them with the tartness of lemon juice and the sweetness of sugar. The result is a sophisticated spread that pairs beautifully with soft cheeses, charcuterie boards, or roasted meats. Its vivid green color makes it a stunning addition to any holiday table or special occasion dinner. While technically a fruit preserve due to the pectin, its herbal profile offers a distinct twist on traditional jellies, providing a refreshing palate cleanser or a flavorful accent to rich dishes.

Directions
-
Wash and chop 3 bunches of parsley.
-
Measure 4 cups of chopped parsley into a large bowl.
-
Add 3 cups of boiling water to the parsley, cover, and let stand for 15 minutes to infuse.
-
Strain the liquid through several layers of cheesecloth to remove all solids, pressing gently to extract maximum juice.
-
Measure 3 cups of the strained parsley juice into a 6- to 8-quart saucepot.
-
Add 2 tablespoons of lemon juice to the juice in the saucepot.
-
Mix 1 box of SURE-JELL fruit pectin into the juice mixture.
-
Place the pot over high heat and stir constantly until the mixture comes to a full boil.
-
Immediately add 4 1/2 cups of sugar and stir vigorously.
-
Bring the mixture to a full rolling boil that cannot be stirred down and boil hard for exactly 1 minute, stirring constantly.
-
Remove from heat and skim off any foam with a metal spoon.
-
Stir in a few drops of green food coloring if desired to enhance the color.
-
Ladle the hot jelly quickly into hot jars, filling within 1/8 inch of the tops.
-
Wipe the rims and threads of the jars with a clean, damp cloth.
-
Cover with two-piece lids and screw bands on tightly.
-
Invert the jars for 5 minutes, then turn them upright to cool.
-
After 1 hour, check the seals to ensure they have set properly.
