Description

Paupiettes de boeuf is a classic French dish featuring thin slices of beef rolled around a savory filling of mushrooms, parsley, and breadcrumbs. The meat is gently pounded, stuffed, and rolled, then seared to lock in juices before being slow-cooked to perfection. This method ensures the beef becomes incredibly tender while absorbing the flavors of the aromatic sauce. The final touch of garlic and Dijon mustard adds a tangy depth that complements the earthy mushroom filling. Ideal for a special dinner or a cozy weeknight treat, this recipe delivers restaurant-quality results with simple techniques. Serve with mashed potatoes or crusty bread to soak up the delicious sauce.

Directions

  1. In a heavy skillet over medium-low heat, melt 2 tablespoons of butter.
  2. Add the chopped onions and minced mushrooms; sauté until the onions are translucent and mushrooms are soft.
  3. Stir in the lemon rind, bread crumbs, parsley, 1 teaspoon salt, and 1/4 teaspoon pepper.
  4. Cook for 1 minute until the parsley wilts, then quickly stir in the beaten eggs to bind the mixture.
  5. Remove the skillet from heat and set the stuffing aside to cool.
  6. Place beef slices between plastic wrap and flatten with a rolling pin or mallet until very thin and about twice the original size.
  7. Season each flattened beef slice lightly with salt, pepper, and a pinch of thyme.
  8. Place 1 teaspoon of the stuffing mixture at the wide end of each beef slice.
  9. Roll up the meat tightly like a sausage and secure with a wooden toothpick through the center.
  10. Lightly roll each beef roll in flour, shaking off any excess.
  11. In a large skillet over medium-high heat, melt 4 tablespoons of butter.
  12. Brown the beef rolls on all sides, then transfer them to the slow cooker.
  13. Pour warm water into the skillet, scraping up any browned bits from the bottom.
  14. Pour the pan juices into the slow cooker with the beef.
  15. Cover and cook on Low for 5 hours.
  16. About 30 minutes before serving, mix the crushed garlic and Dijon mustard into the sauce.
  17. Cover and increase heat to High; cook for an additional 30 minutes.
  18. Taste the sauce and adjust seasoning with salt or more mustard if needed.
  19. Serve hot, removing toothpicks before eating.
