Description

This microwave peanut brittle delivers the classic crunch and rich, buttery flavor of traditional candy without the need for a stovetop or thermometer. The combination of sugar and corn syrup creates a glossy, amber coating that hardens into a satisfyingly crisp shell around roasted salted peanuts. A quick burst of baking soda aerates the mixture, giving it a light, porous texture that melts in your mouth. It&# 226;ÂÂs an ideal holiday treat or snack, perfect for gifting or enjoying with coffee. With minimal equipment and simple pantry staples, this recipe offers a fast, fuss-free way to enjoy homemade confectionery that rivals store-bought versions.

Ingredients

Directions

  1. In a large 4-cup microwave-safe glass measuring cup, thoroughly mix the white corn syrup and sugar until combined.
  2. Microwave on High power for 4 minutes, then stir in the roasted peanuts.
  3. Microwave on High for 3 to 5 minutes, watching carefully, until the mixture turns a light golden brown color.
  4. Carefully remove from microwave and stir in the vanilla extract and butter.
  5. If the mixture is not yet golden, microwave for an additional 30 seconds to 1 minute, checking frequently.
  6. Immediately sprinkle the baking soda over the hot syrup and stir quickly and vigorously; the mixture will foam and expand rapidly.
  7. Quickly pour the foamy mixture onto a well-greased baking sheet or Teflon-coated pan, spreading it out as thinly as possible.
  8. Allow to cool completely at room temperature until hard, then break into pieces.

Note

Use a large microwave-safe glass container (at least 4 cups capacity) to prevent boiling over, as the mixture expands significantly when baking soda is added.

Caution: The syrup will be extremely hot. Use oven mitts when removing the container from the microwave.

Stir quickly and thoroughly when adding baking soda to ensure even aeration and a lighter texture.

Store in an airtight container at room temperature. Humidity can cause the brittle to become sticky, so keep it in a dry place.

For a nut-free version, omit peanuts or substitute with sunflower seeds or pumpkin seeds (pepitas).
