Ingredients

Directions

  1. Preheat oven to 350F (175C).
  2. In a large mixing bowl, cream together granulated sugar, brown sugar, softened butter, peanut butter, and egg until well blended.
  3. Stir in flour, baking soda, and baking powder until a cohesive dough forms.
  4. Remove about 1 cup of the dough and set aside for the topping.
  5. Press the remaining dough firmly and evenly onto the bottom of an ungreased 13x9-inch baking pan.
  6. Spread the strawberry preserves evenly over the dough layer.
  7. Crumble the reserved dough generously over the preserves layer.
  8. Bake for 20-25 minutes, or until the edges are golden brown.
  9. Allow the bars to cool completely in the pan.
  10. While cooling, make the glaze: In a small bowl, combine powdered sugar and melted butter.
  11. Add hot water one teaspoon at a time, stirring until the glaze is smooth and thin enough to drizzle.
  12. Drizzle the glaze over the cooled bars.
  13. Cut into 2x1.25-inch bars before serving.

Ensure the bars cool completely before cutting to prevent them from crumbling.

You can substitute strawberry preserves with raspberry or apricot jam for a different flavor profile.

Store leftovers in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.

For a richer crust, you can use salted butter and omit any added salt in the recipe.
