Description

These Peanut Squares are a nostalgic treat featuring a light, airy vanilla cake base that is incredibly tender and moist. The real magic happens after baking: each square is dipped in a simple sweet icing and rolled in finely ground peanuts, creating a delightful contrast between the soft cake, the smooth glaze, and the nutty crunch. They are perfect for afternoon tea, potlucks, or as a sweet ending to a family dinner. Easy to make with pantry staples, these squares bring a homemade charm that everyone will love.

Ingredients

Directions

  1. Preheat oven to 375&# 194;°F (190ðC) and grease a small square cake pan.
  2. Separate the eggs, placing yolks in one bowl and whites in another.
  3. In the bowl with yolks, add cold water and 1/2 cup of the sugar. Beat until the mixture is thick, pale, and fluffy.
  4. In the separate bowl, beat egg whites until stiff peaks form. Gradually add the remaining sugar and beat until stiff and glossy.
  5. Gently fold the beaten egg whites into the yolk mixture until combined.
  6. Sift together the cake flour, baking powder, and salt.
  7. Fold the dry ingredients into the egg mixture in two batches, being careful not to deflate the batter.
  8. Stir in the vanilla extract.
  9. Pour the batter into the prepared pan and smooth the top.
  10. Bake for 20 minutes, or until a toothpick inserted in the center comes out clean.
  11. Allow the cake to cool completely in the pan before removing.
  12. Cut the cooled cake into squares.
  13. Dip each square into your desired icing.
  14. Roll the iced squares in ground peanuts to coat evenly.

Note

For best results, ensure eggs are at room temperature before separating to maximize volume when beating.

You can use a food processor to grind whole peanuts for a fresh, nutty coating.

Store leftovers in an airtight container at room temperature for up to 2 days, or refrigerate for longer freshness.

If you prefer a less sweet coating, you can skip the icing and roll the warm squares in sugar and crushed peanuts instead.
