Wash the liver thoroughly under cold water.

Place the liver in a pan with vinegar, black pepper, and water.

Cook the liver for 5-8 minutes until just done.

Drain the liver and allow it to cool completely.

Remove the skin from the liver and cut it into 1 cm cubes.

Slice the onion, crush the garlic, and powder the cardamoms and cloves.

Place the cubed liver in a bowl.

Mix in the powdered cardamoms, cloves, lime juice, cinnamon stick, chilli powder, paprika, fennel powder, coriander powder, and cumin powder.

Let the liver marinate for 30 minutes.

Heat the oil in a pan over medium heat.

Fry the sliced onion, crushed garlic, curry leaves, and lemongrass until the onion turns golden brown.

Add the marinated liver along with the marinade and thick coconut milk to the pan.

Stir well to combine all ingredients.

Simmer for a further 10 minutes, stirring occasionally.

Discard the cinnamon stick before serving.
