Ingredients

Directions

  1. Preheat your oven to 400F (200C).
  2. Roll out the flaky butter pastry dough on a lightly floured surface to fit a 9-inch tart pan or baking sheet, as directed for your specific pastry recipe.
  3. Transfer the rolled dough to your baking sheet or tart pan and refrigerate while you prepare the fruit.
  4. Slice the plums in half through the stem and remove the pits.
  5. Slice each plum half into 1/4-inch thick slices. You should have approximately 3 cups of sliced fruit.
  6. Place the plum slices in a bowl and toss gently with the kirsch (or chosen liqueur) and 6 tablespoons of sugar. Set aside to macerate slightly.
  7. In a small bowl, combine the 2 tablespoons of all-purpose flour with the remaining 1 tablespoon of sugar.
  8. Remove the dough from the refrigerator. Sprinkle the flour-sugar mixture evenly over the surface of the dough, leaving a 1-inch border uncovered around the edges.
  9. Arrange the plum slices evenly over the flour-sugar mixture, creating a single layer or slightly overlapping rows.
  10. Fold the rim of the dough over the plums, crimping the seams lightly with moistened fingers to seal.
  11. Shave or dot the top of the plums with the unsalted butter.
  12. Bake the tart in the preheated oven for 30-35 minutes, or until the crust is golden brown and the fruit is tender.
  13. Allow to cool slightly before slicing and serving.
