Directions
-
Shuck the oysters carefully, reserving both the shells and the natural oyster juice.
-
Pour the reserved oyster juice into a hot sauté pan and bring it to a rolling boil.
-
Gently add the shucked oysters to the boiling juice and poach for 2-3 minutes, or until the edges curl slightly.
-
While the oysters cook, place the black peppercorns, peeled garlic cloves, and salt into a mortar.
-
Grind the mixture in the mortar until it forms a rough, aromatic paste.
-
Add approximately 1/2 cup of the hot liquid from the oyster poaching juice to the mortar and continue grinding to create a smooth sauce base.
-
Remove the poached oysters from the pan using a slotted spoon and set them aside.
-
Add the olive oil and bay leaves to the remaining liquid in the pan and bring back to a boil.
-
Stir the pepper-garlic paste mixture into the pan, then return the oysters to the pan to heat briefly.
-
Remove the pan from the heat and immediately stir in the fresh lime juice.
-
Arrange the oysters on serving plates and pour the warm pepper sauce over them.

Note
For the best flavor development, cover the plated oysters and refrigerate overnight before serving. They can be served cold or brought to room temperature.
Ensure oysters are fresh and lively before shucking. Discard any oysters that do not close tightly when tapped.
If you do not have a mortar and pestle, a spice grinder or food processor can be used to create the pepper-garlic paste, though the texture may be finer.
The heat level can be adjusted by using more or fewer black peppercorns. For a different flavor profile, try adding a pinch of red pepper flakes to the mortar mixture.
Serve with crusty bread to soak up the delicious sauce.
