Pepper Jelly

Description

This International dessert features Sugar, Cider vinegar, Sweet pepper slices, Hot pepper slices, bottle) Certo. It delivers sweet, indulgent flavor, a pleasant kick of heat. A wonderful way to end any meal, especially on special occasions. Simple to make with ingredients you likely already have on hand, this is a recipe you will come back to again and again.

  1. liquid pectin
  2. Simmer sugar, vinegar and peppers very slowly for 10 minutes stirring to be sure all sugar is well dissolved.
  3. Turn off heat and let stand for 30 minutes.
  4. Bring to a boil and add Certo.
  5. Boil 1 minute.
  6. Cool and stir with non-metal spoon 5 minutes.
  7. Check that it comes of the spoon in a ribbon or sheet.
  8. If not, cook it a bit more.
  9. Pour into jars and seal, or pour into freezer containers and freeze (that's what I do).
  10. I like to use red and yellow peppers for color, or all green.
  11. Mixing red and green isn't as pretty as you might think it would be, as it makes the jelly browner.
  12. I have substituted home made pectin, which seems to work fine, if it is the same consistency as the Certo.
  13. It just tends to be pinker.
  14. make that by boiling apple skins and cores in as little water as possible, with a lid on, and then cooling it and pressing the juice out through a sieve and saving it in a bottle in the fridge till I have enough.

  19. add more pectin and more sugar and
  20. cook it until it sheets right.
