Description

This elegant yet rustic dessert transforms simple phyllo dough into golden, crispy crumbles. The star is the vibrant orange-vanilla syrup, reduced to a glossy glaze that coats every shard. Served with fresh clementine segments and a scoop of vanilla ice cream, it offers a perfect balance of texture and flavor. The citrus brightness cuts through the buttery richness, making it a refreshing finish to any meal. Ideal for holiday gatherings or a special weekend treat, this dish brings a touch of Greek-inspired simplicity to your table.

Ingredients

Directions

  1. Preheat your oven to 350F (175C).
  2. In a small heavy saucepan, combine the orange juice, 3 tablespoons of sugar, vanilla bean (pod and seeds), bay leaves, and a tiny pinch of salt.
  3. Bring the mixture to a simmer over medium heat and reduce until it reaches 1 1/2 cups, creating a thickened syrup. Remove from heat and let cool slightly.
  4. Unwrap the thawed phyllo dough and unroll it on a clean work surface. Keep the remaining sheets covered with a damp towel to prevent drying out.
  5. Remove 3 sheets of phyllo dough and cut each sheet in half crosswise to create 6 rectangular pieces.
  6. Lightly brush the phyllo pieces with melted butter and sprinkle with the remaining 1/2 cup of sugar.
  7. Crumple each buttered phyllo piece loosely into a ball or irregular shape and place them on a baking sheet lined with parchment paper.
  8. Bake the phyllo crumbles in the preheated oven for 15-20 minutes, or until golden brown and crisp. Rotate the pan halfway through baking for even browning.
  9. While the phyllo bakes, remove the vanilla bean pod and bay leaves from the cooled orange syrup.
  10. To serve, place a scoop of vanilla ice cream in each bowl. Top with the warm phyllo crumbles and drizzle generously with the orange-vanilla syrup.
  11. Garnish with fresh clementine sections and a sprig of fresh mint before serving immediately.

Note

For a vegan version, ensure you use vegan butter for brushing the phyllo and a dairy-free vanilla ice cream.

The phyllo dough dries out quickly. Keep the unused sheets covered with a damp kitchen towel while working.

If you don't have a vanilla bean, you can substitute 1 teaspoon of high-quality vanilla extract. Add it to the syrup after removing it from the heat.

The orange syrup can be made ahead of time and stored in the refrigerator for up to a week. Reheat gently before using.

Clementines can be substituted with mandarin oranges or even fresh orange segments if clementines are out of season.

For extra crunch, you can sprinkle a little extra sugar on the phyllo before baking.
