Phyllo Pastry Pizza With Broccoli Pesto, Tomatoes And Goa
Description
This elegant appetizer transforms delicate phyllo pastry into a crispy, flaky pizza base that rivals any dough. The star of the show is the vibrant broccoli pesto, which adds a fresh, herbaceous green layer of flavor. Bright, juicy tomato pieces provide a sweet acidity that cuts through the richness of the pastry, while frozen goat cheese is grated over the top for a creamy, tangy finish. Black olives add a briny depth and chewy texture. This dish is perfect for entertaining, offering a sophisticated yet easy-to-assemble option for parties or dinner parties. It pairs beautifully with a crisp white wine or a light salad, making it an ideal starter for a Mediterranean-inspired meal.Ingredients
Directions
-
Preheat the oven to 350 degrees F (175 degrees C).
-
Lay out the 7 sheets of phyllo pastry. Using a pizza screen or a round baking pan as a guide, cut all 7 sheets into large circles of uniform size.
-
Lightly spray the pizza screen or baking surface with olive oil cooking spray.
-
Place the first sheet of phyllo onto the prepared surface. Lightly spray with olive oil and sprinkle with approximately 1/2 teaspoon of the grated Parmigiano-Reggiano cheese.
-
Repeat this process, layering the remaining phyllo sheets one by one. Spray each sheet lightly with oil and sprinkle with cheese until all 7 sheets are stacked.
-
Spread the broccoli pesto evenly over the top layer of phyllo, leaving a small border around the edge.
-
Arrange the chopped tomatoes and black olives on top of the pesto. Scatter the basil leaves over the vegetables.
-
Using a microplane or grater, grate the frozen goat cheese generously over the entire pizza.
-
Bake in the preheated oven for 3 to 5 minutes, or until the phyllo is golden and crisp.
-
Remove from oven and serve immediately while hot and crisp.

Note
Keep the phyllo pastry covered with a damp towel while working to prevent it from drying out and cracking.
Freezing the goat cheese makes it much easier to grate into fine, fluffy shreds that melt beautifully over the warm pizza.
Watch the phyllo closely during baking; it can go from golden to burnt very quickly due to its thinness.
For a vegan version, omit the Parmigiano-Reggiano and goat cheese, or substitute with nutritional yeast and a vegan cheese alternative.
