  1. Cover pinto beans with enough water to cover & bring to a boil.
  2. Reduce heat & simmer until they are just tender.
  3. Add potatoes, celery & salt & more water if necessary.
  4. Cook over low heat.
  5. Just before the potatoes & beans are tender, gently fry the onions in a heavy skillet.
  6. Using a slotted spoon, add the beans to the skillet & stir until well mixed & heated through.
  7. Serve hot over rice or a stiff porridge.
  8. This dish traditionally uses manioc (casava) in place of the potatoes.
