Pita Of Greens, Herbs & Eggs
Description
This traditional Greek dish is a comforting savory pie that transforms simple wild or garden greens into a luxurious meal. The filling combines tender spinach or dandelion greens with aromatic parsley, dill, and chervil, bound together with eggs and salty feta cheese. Encased in crisp, buttery layers of filo dough, the pita bakes until golden and flaky. It offers a beautiful contrast between the soft, herbaceous interior and the crunchy crust. Perfect for a family lunch, a vegetarian main course, or a hearty addition to a festive table, this recipe captures the rustic essence of village cooking. Serve it warm, sliced into squares or diamonds, for a satisfying dish that feels both homestyle and elegant.Ingredients
Directions
-
Wash the greens thoroughly, trim coarse ends, drain well, and chop finely. Sprinkle with salt and squeeze tightly until all liquid is removed.
-
In a large bowl, combine the drained greens with chopped parsley, dill, and chervil. Mix thoroughly and set aside.
-
Heat 1/4 cup butter in a large frying pan over medium heat. Add chopped scallions and sauté until the white parts are translucent.
-
Add the green mixture, allspice, cinnamon, nutmeg, sugar, and pepper to the pan. Season with salt carefully, keeping in mind the feta will add saltiness later.
-
Partially cover the pan and simmer for 20 minutes, or until all liquid has been absorbed. Remove from heat and allow the mixture to cool in a large bowl.
-
Once cooled, stir in the beaten eggs, crumbled feta cheese, and enough milk to saturate the greens. Mix until well combined.
-
Preheat oven to 350F (175C). Butter a 15 x 11 x 2-inch baking pan.
-
Layer 6 filo sheets in the pan, brushing each sheet with melted butter.
-
Pour the filling into the pan and spread it evenly over the filo base.
-
Cover the filling with the remaining 6 filo sheets, brushing each sheet with melted butter.
-
Flute the edges of the pastry and brush the top layer generously with butter.
-
Using a sharp knife, score the top layers into square or diamond shapes for serving.
-
Bake for 45 minutes, or until the top is golden brown and crisp.
-
Allow the pita to cool slightly before slicing and serving warm.
