Directions
-
Preheat oven to 350F (177C).
-
In a heavy skillet, saut sweet and hot Italian sausages until browned.
-
Drain excess fat from the sausages and transfer them to a large bowl.
-
Stir the Spicy Tomato Sauce into the sausage mixture and set aside.
-
In a separate bowl, mix ricotta cheese, Parmesan cheese, 1/2 cup of chopped parsley, 2 tablespoons of oregano, 1 egg, and freshly ground black pepper to taste.
-
In a 9x13 inch rectangular ovenproof dish, spread half of the sausage mixture evenly.
-
Dot the sausage layer with half of the ricotta cheese mixture.
-
Sprinkle 2 cups of grated mozzarella cheese evenly over the ricotta layer.
-
Sprinkle with 1/2 of the remaining parsley and half of the remaining oregano.
-
Repeat the layers with the remaining sausage mixture, ricotta mixture, mozzarella cheese, parsley, and oregano.
-
Roll out three-quarters of the pizza dough to a thickness of about 1/3 inch, ensuring it is about 1 inch larger than the pan on all sides.
-
Transfer the rolled dough to the top of the pie filling and tuck in the excess dough around the edges to seal.
-
Beat the remaining egg with 1 tablespoon of water and brush the mixture over the top of the crust.
-
Roll out the remaining dough and cut into decorative shapes using cookie cutters if desired.
-
Arrange the decorative dough shapes on top of the crust.
-
Brush the decorative shapes again with the beaten egg mixture.
-
Bake for 35 to 45 minutes, or until the top crust is golden brown and the edges are bubbling.
-
Let the pie stand for 30 minutes before cutting and serving.
