Ingredients

Directions

  1. Preheat oven to 350F (177C).
  2. In a heavy skillet, saut sweet and hot Italian sausages until browned.
  3. Drain excess fat from the sausages and transfer them to a large bowl.
  4. Stir the Spicy Tomato Sauce into the sausage mixture and set aside.
  5. In a separate bowl, mix ricotta cheese, Parmesan cheese, 1/2 cup of chopped parsley, 2 tablespoons of oregano, 1 egg, and freshly ground black pepper to taste.
  6. In a 9x13 inch rectangular ovenproof dish, spread half of the sausage mixture evenly.
  7. Dot the sausage layer with half of the ricotta cheese mixture.
  8. Sprinkle 2 cups of grated mozzarella cheese evenly over the ricotta layer.
  9. Sprinkle with 1/2 of the remaining parsley and half of the remaining oregano.
  10. Repeat the layers with the remaining sausage mixture, ricotta mixture, mozzarella cheese, parsley, and oregano.
  11. Roll out three-quarters of the pizza dough to a thickness of about 1/3 inch, ensuring it is about 1 inch larger than the pan on all sides.
  12. Transfer the rolled dough to the top of the pie filling and tuck in the excess dough around the edges to seal.
  13. Beat the remaining egg with 1 tablespoon of water and brush the mixture over the top of the crust.
  14. Roll out the remaining dough and cut into decorative shapes using cookie cutters if desired.
  15. Arrange the decorative dough shapes on top of the crust.
  16. Brush the decorative shapes again with the beaten egg mixture.
  17. Bake for 35 to 45 minutes, or until the top crust is golden brown and the edges are bubbling.
  18. Let the pie stand for 30 minutes before cutting and serving.
