Directions
-
If using mushrooms and garlic, slice the mushrooms and mince the garlic. Sauté them in a small portion of the butter over medium heat until the mushrooms are browned and the garlic is fragrant, about 3-4 minutes. Remove from pan and set aside.
-
In the same saucepan, melt the remaining butter over low heat. Do not let it brown.
-
Remove the pan from the heat source. Immediately stir in the grated Parmesan cheese until fully melted and smooth.
-
Stir in the heavy cream and the reserved mushroom and garlic mixture (if using).
-
Return the saucepan to low heat. Warm the sauce gently, stirring constantly, just until it begins to simmer. Do not boil vigorously, as this may cause the sauce to separate.
-
Immediately toss the warm sauce with freshly cooked, hot pasta. Serve right away.
Note
For best results, use freshly grated Parmesan cheese rather than pre-shredded, which often contains anti-caking agents that can make the sauce grainy.
If the sauce becomes too thick, add a splash of hot pasta water to thin it to your desired consistency.
Alfredo sauce does not reheat well as it tends to separate. It is best served immediately after preparation.
Optional additions: Add a pinch of nutmeg or black pepper for extra flavor depth. You can also add cooked chicken or shrimp for a main course.
