Blueberry Cobbler

Difficulty: Intermediate
Servings: 5 cups

Description

This classic Blueberry Cobbler is the ultimate comfort food, featuring a juicy, thickened berry filling that bursts with summer flavor. The topping is a tender, drop-biscuit style crust that offers a perfect textural contrast to the soft fruit. Sweetened with just enough sugar to enhance the natural tartness of the blueberries, this dessert is simple enough for a weeknight treat but impressive enough for a dinner party. Serve it warm straight from the oven with a scoop of vanilla ice cream or a dollop of whipped cream for an unforgettable experience. It’s rustic, hearty, and deeply satisfying.

Ingredients

Directions

  1. Preheat oven to 400°F (200°C).
  2. In a small saucepan, combine blueberries, 0.5 cup sugar, tapioca, and water. Bring to a boil over medium heat, stirring occasionally. Cook until the mixture thickens and bubbles, about 5 minutes. Remove from heat and stir in 1 Tbsp butter.
  3. Pour the hot blueberry filling into an 8-inch round baking dish.
  4. In a medium bowl, sift together 1 cup flour, 2 Tbsp sugar, baking powder, and salt.
  5. Cut in the 0.25 cup cold butter until the mixture resembles coarse crumbs.
  6. In a small bowl, combine the milk and beaten egg. Pour this wet mixture all at once into the dry ingredients. Stir gently just until moistened; do not overmix.
  7. Let the batter stand for 5 minutes.
  8. Drop the biscuit batter in 6 mounds directly onto the hot blueberry filling in the baking dish.
  9. Bake for 20 to 25 minutes, or until the topping is golden brown and cooked through.
  10. Serve warm with vanilla ice cream or whipped cream.

Note

You can use fresh or frozen blueberries. If using frozen, do not thaw before mixing to prevent the filling from becoming too watery.

For a crispier topping, you can sprinkle a little extra sugar over the biscuit mounds before baking.

This cobbler is best served fresh out of the oven but can be stored covered in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.

Substitute the milk with buttermilk for a slightly tangier, more tender crumb topping.
