  1. In a small bowl, beat the egg yolks until smooth and slightly thickened. Set aside.
  2. In a medium non-reactive saucepan, combine the milk and sugar. Bring to a boil over moderate heat.
  3. Once boiling, gradually whisk about 1/3 of the hot milk mixture into the egg yolks to temper them.
  4. Pour the yolk mixture back into the saucepan with the remaining milk. Return to a simmer over low heat.
  5. Cook, whisking constantly, until the sauce thickens enough to coat the back of a spoon, about 1 to 1 1/2 minutes. Do not let it boil again.
  6. Immediately remove from heat. Whisk constantly for 1 minute to cool slightly.
  7. Strain the sauce through a fine-mesh sieve into a clean bowl to ensure smoothness. Whisk for 30 seconds.
  8. Stir in the bourbon and vanilla extract. Serve warm.

Note

You can substitute bourbon with any liqueur you prefer, such as rum, brandy, or Irish cream.

If you prefer a non-alcoholic version, omit the liquor and double the amount of vanilla extract.

This sauce will thicken as it cools. If reheating, do so gently over low heat, stirring frequently, to avoid curdling the eggs.

Store leftovers in an airtight container in the refrigerator for up to 3 days.
