  1. Preheat oven to 350°F (175°C). Lightly grease a baking sheet or line it with parchment paper.
  2. In a large mixing bowl, whisk together the flour, baking powder, and salt.
  3. Add the cold, cubed butter to the flour mixture. Cut the butter into the flour using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. Stir in the sugar and raisins until evenly distributed.
  5. Make a well in the center of the dry ingredients. In a small bowl, beat the whole egg and mix with about 1/2 cup of milk.
  6. Pour the egg and milk mixture into the well. Gently stir with a fork until the dough just begins to come together. If the dough is too dry, add a little more milk, one tablespoon at a time. Do not overmix.
  7. Turn the dough out onto a lightly floured surface. Gently knead just enough to form a cohesive ball, about 5-10 strokes. Roll out the dough to about 1/2 inch thickness.
  8. Use a 2-inch round cutter to cut out scones. Place them on the prepared baking sheet, leaving about 1 inch of space between each.
  9. Brush the tops of the scones with the beaten egg wash for a golden finish.

Note

For best texture, keep the butter cold until the moment you add it to the flour.

Do not over-knead the dough, as this will make the scones tough instead of tender.
