Description

This rustic yet elegant dish transforms humble bulgur wheat into a hearty meal with deep, savory flavors. The grains are toasted in oil with onion until fragrant, then simmered to perfection. It is crowned with crispy fried dried salted fish, tender blanched celery, and slices of hard-boiled egg. A bright dressing of lemon juice, olive oil, and salt ties the earthy grains and rich fish together. Perfect for a quick summer dinner or a flavorful side dish, this recipe offers a satisfying texture contrast between the fluffy bulgur and the crunchy toppings. It is a passionate home cook’s tribute to simple, robust ingredients that create something truly special on the plate.

Ingredients

Directions

  1. Boil the egg until almost hard-boiled. Peel and slice it.
  2. Cut the onion into small pieces and slowly fry it in ample oil until softened.
  3. Add the bulgur wheat to the pan and continue frying, stirring occasionally for 5-8 minutes, until the grains are coated in oil and fragrant.
  4. Add salt and enough water so that the water level is about 1cm higher than the bulgur. Stir well.
  5. Cover the pan, turn the heat to low, and allow the water to evaporate completely. Let it simmer for an additional 5 minutes.
  6. While the bulgur cooks, fry the dried salted fish until crispy.
  7. Blanch the celery for 2 minutes if you prefer it tender, or leave it raw for crunch.
  8. Arrange the fried fish, celery, sliced egg, and tomato pieces aesthetically on a serving plate.
  9. Sprinkle ample lemon juice over the dish, drizzle with 2-3 tablespoons of oil, and season with salt to taste.

Note

Bulgur wheat can be replaced with quinoa for a different texture and flavor profile.

If you cannot find dried salted fish, substitute with any tasty non-white meat fish, fried or baked.

You can add fine-cut garlic cloves to the onion while frying for extra aroma.

Feel free to season with other spices like curry powder or five-spice powder instead of just salt.
