  2. Line a 15-1/2x10-1/2x1-inch jelly-roll pan with foil, then generously grease the foil.

  4. Gradually add 1/2 cup granulated sugar to the egg yolks, continuing to beat for 2 minutes.
  5. In a separate bowl, stir together flour, cocoa, 1/3 cup granulated sugar, baking soda, and salt.
  6. Add the dry ingredients alternately with water and 1 teaspoon vanilla to the egg yolk mixture, beating on low speed just until smooth.
  7. In a clean small bowl, beat egg whites until foamy.
  8. Add 1 tablespoon granulated sugar to the egg whites and beat until stiff peaks form.
  9. Carefully fold the beaten egg whites into the chocolate batter in three additions to maintain airiness.
  10. Spread the batter evenly into the prepared pan.
  11. Bake for 15 to 18 minutes, or until the top springs back when touched lightly.
  12. Immediately invert the hot cake onto a kitchen towel sprinkled with 2 tablespoons powdered sugar.
