  2. In a 3-quart microwave-safe casserole dish, combine 1 cup of sugar, the reserved 1/3 cup pineapple juice, and 2 tablespoons of light corn syrup.
  3. Arrange five pineapple slices in a single layer over the sugar mixture, ensuring they do not overlap.
  4. Microwave on High for 8 to 12 minutes, turning the slices over and rearranging them every 4 minutes.
  5. Continue cooking until the sugar has completely dissolved and the pineapple edges appear glossy and transparent.
  6. Remove the slices to a wire rack to cool; note that they will become more transparent as they cool.
  7. Once the first batch is removed, add the remaining pineapple slices to the hot syrup in the casserole and repeat the microwaving process until glossy and transparent.
