Ingredients

Directions

  1. Preheat the oven to 350ðF (175ðC). Grease a 10-inch springform pan.
  2. In a bowl, mix the crushed graham crackers, chopped pecans, and melted butter until the mixture resembles wet sand.
  3. Press the crumb mixture firmly into the bottom and slightly up the sides of the prepared springform pan.
  4. Bake the crust for 10 minutes, then remove from the oven and let cool slightly.
  5. In a saucepan, combine chopped apples, sugar, cornstarch, and apple pie spice. Cook over medium heat, stirring occasionally, until the apples are tender and the sauce has thickened. Set aside to cool.
  6. In a large mixing bowl, beat the cream cheese until smooth and creamy. Gradually add the remaining sugar and beat until combined.
  7. Add the sour cream and eggs to the cream cheese mixture one at a time, beating on low speed just until incorporated.
  8. Pour half of the cheesecake batter into the crust. Layer half of the cooked apple mixture over the batter.
  9. Pour the remaining batter over the apples, then swirl in the remaining apple mixture and a few drizzles of caramel topping using a knife.
  10. Place the springform pan in a larger roasting pan and fill the roasting pan with hot water until it reaches halfway up the sides of the springform pan.
  11. Bake for 50-60 minutes, or until the center is almost set but still slightly jiggly.
  12. Turn off the oven and crack the door open. Let the cheesecake cool in the oven for 1 hour.
  13. Remove from the water bath and refrigerate for at least 4 hours, or overnight, before slicing and serving.
