  1. Place 1 1/2 cups of the sugar into a heavy saucepan, ensuring no crystals cling to the sides.
  2. Add the light cane syrup to the sugar in the saucepan.
  3. Place the saucepan over medium heat and stir gently as the sugar begins to melt.
  4. While the first mixture heats, place the remaining 1 1/2 cups of sugar in a heavy sauté pan (preferably cast iron) over medium heat.
  5. Stir the sugar in the sauté pan until it melts and turns a deep golden brown, being careful not to let it burn.
  6. Once the sugar in the saucepan boils, pour down the sides of the pan to wash away any crystals that may have collected there.
  7. Carefully add the browned sugar mixture from the sauté pan into the boiling mixture in the saucepan, stirring constantly.
  8. Continue to cook and stir until the mixture reaches the soft ball stage (240ðF (116ðC)).
  9. Remove from heat and add vanilla extract.
  10. Pour the hot caramel mixture over chunked butter in a mixing bowl.
  11. Let the mixture cool for about 5 minutes until it is warm but not hot.
  12. Beat the mixture vigorously with an electric mixer until it becomes creamy, smooth, and reaches a spreading consistency.

  14. Frost the top of each cake layer, stacking them together, then frost the sides and top of the assembled cake.
