Description

This classic Carbonara sauce transforms simple ingredients into a luxurious coating for pasta. The key is tempering the hot pasta with the egg mixture to create a creamy, velvety sauce without scrambling the eggs. It&# 226;€™s perfect for a quick weeknight dinner or a special date night meal. The salty crunch of the bacon contrasts beautifully with the smooth, cheesy richness, creating a balanced and deeply satisfying dish that feels both comforting and elegant.

Ingredients

Directions

  1. Bring a large pot of salted water to a rolling boil for the pasta.
  2. In a small bowl, whisk together the whole eggs, egg yolks, and half of the grated Parmesan cheese until smooth.
  3. In a large skillet, cook the bacon slices over medium heat until crisp and browned.
  4. Remove the bacon from the skillet, leaving about 2 tablespoons of fat in the pan.
  5. Add the red pepper flakes to the bacon fat and cook for 30 seconds until fragrant.
  6. Pour in the heavy cream and bring to a gentle simmer, stirring occasionally.
  7. Add the butter to the cream mixture and stir until melted and combined.
  8. Cook the pasta in the boiling water according to package directions until al dente.
  9. Reserve one cup of the pasta cooking water, then drain the pasta.
  10. Immediately add the hot drained pasta to the skillet with the cream mixture.
  11. Remove the skillet from the heat source to prevent scrambling the eggs.
  12. Quickly pour the egg and cheese mixture over the hot pasta, tossing vigorously.
  13. Add the reserved pasta water a little at a time while tossing to create a creamy, glossy sauce.
  14. Stir in the crispy bacon pieces and the remaining Parmesan cheese.
  15. Season with salt and freshly ground black pepper to taste.
  16. Serve immediately while hot and creamy.
