Ingredients

Directions

  1. Preheat your oven to 350ðF (175ðC).
  2. Bring a medium saucepan of water to a boil; add the unpeeled garlic cloves and blanch for 30 seconds, then drain.
  3. Refill the saucepan with fresh water, bring to a boil again, and blanch the garlic for another 30 seconds before draining thoroughly.
  4. Spread the blanched garlic cloves in a single layer on a shallow baking pan.
  5. Drizzle the garlic with 1 tablespoon of olive oil and toss gently to coat evenly.
  6. Roast in the oven until the cloves are tender and lightly browned, about 25 minutes.
  7. Remove from oven and let cool slightly, then peel and chop the roasted garlic; set aside.
  8. In a large saucepan or Dutch oven, melt the unsalted butter over medium-low heat.
  9. Add 1 1/2 cups of Arborio rice and sauté, stirring constantly, for about 1 minute until lightly toasted.
  10. Pour in 1/2 cup of dry white wine and stir until the liquid is mostly absorbed.
  11. Begin adding warm vegetable stock (about 5 cups total) one ladle at a time, stirring frequently.
  12. Continue adding stock and stirring until the rice is tender and creamy, about 20-30 minutes.
  13. Fold in the chopped roasted garlic and 1/2 cup of chopped fresh chives or green onions.
  14. Season with salt and freshly ground black pepper to taste.
  15. Serve immediately while hot and creamy.
