Directions
-
Bring a large pot of salted water to a boil and cook the 16 oz pasta twirls according to package directions until al dente. Drain and set aside.
-
While pasta cooks, heat a large skillet over medium-high heat. Add the 1 1/2 lbs of cut venison sausage pieces and the 2 minced garlic cloves.
-
Cook and stir the sausage and garlic for about 10 minutes, or until the sausage is lightly browned. Watch closely as venison has little fat and can burn easily.
-
Add the 2 cups sliced mushrooms and 1 coarsely chopped large onion to the skillet. Cook for 3 to 4 more minutes until the onions begin to soften.
-
Stir in 1/2 lb cubed zucchini, 1/2 lb cubed yellow summer squash, the 14-16 oz can of diced tomatoes, 1 can tomato paste, 1 tsp dried basil, 1 tsp dried oregano, and 1 beef bouillon cube.
-
Add 1 tsp chili powder and 1 tsp Louisiana hot sauce if desired. Stir well to combine all ingredients and dissolve the bouillon cube.
-
Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 15 minutes, or until the zucchini and squash are tender but still crisp.
-
Stir occasionally during simmering to prevent the sauce from sticking to the bottom of the pan.
-
Transfer the cooked pasta to the skillet with the sausage and vegetable sauce. Toss gently to coat the pasta evenly.
-
Serve immediately, garnished with a liberal sprinkling of fresh parsley.
