  1. Peel 1.5 pounds of zucchini, reserving the skins, and chop the flesh into medium-small pieces.
  2. Wash and chop 1 large leek into medium-small pieces.
  3. In a large skillet, heat 1/4 cup of olive oil over medium-high heat until hot.
  4. Add the chopped carrots and onions, sautéing for 4 to 5 minutes until the onions are translucent.
  5. Add enough water to cover the carrots and onions, then simmer for 30 to 40 minutes until the liquid is absorbed and vegetables are tender.
  6. Transfer the carrot mixture to a blender and puree until completely smooth. Set aside to cool.
  7. In a clean skillet, heat the remaining 1/4 cup of olive oil over medium-high heat.
  8. Add the chopped zucchini flesh and leeks, sautéing for 4 to 5 minutes until just tender.
  9. Add enough water to cover the zucchini and leeks, then simmer for 25 to 30 minutes until the liquid is absorbed.
  10. Transfer the zucchini-leek mixture to a blender and puree until smooth. Set aside to cool.
  11. Bring a pot of water to a boil and blanch the reserved zucchini skins for 3 minutes.
  12. Drain the skins and place them in a blender. Add a small amount of cold water and puree until a thick, smooth green puree forms. Set aside to cool.
  13. Refrigerate all three purees until completely cold, at least 2 hours.
  14. To serve, spoon a portion of each puree into individual bowls and swirl them together with a knife to create a decorative design.
