  1. Score a small X into the root end of each unpeeled pearl onion.
  2. Place onions in a large saucepan and cover with boiling water. Boil for 3 minutes, then drain and rinse under cold water.
  3. Cut off the root ends and peel the skin off each onion. Return the peeled onions to the saucepan and cover with fresh water.
  4. Add the salt to the water, bring to a boil, and simmer for 10 to 15 minutes until the onions are tender. Drain and set aside.
  5. In a separate large saucepan, combine half of the chicken broth and the butter. Heat over medium-high heat until the butter is completely melted.
  6. Add the peeled, finely chopped carrots and dried thyme leaves to the saucepan. Cover and cook for about 5 minutes until the carrots are very tender.
  7. Transfer the carrot mixture to a blender or food processor and blend until completely smooth.
  8. Pour the carrot purée back into the saucepan. Sprinkle in the flour and whisk vigorously until fully blended and smooth.
  9. Stir in the remaining chicken broth, ground pepper, and nutmeg. Mix well and heat until simmering.
  10. Cook the sauce, stirring occasionally, for 2 to 3 minutes until slightly thickened.
  11. Gently fold in the cooked pearl onions and heat through for another minute before serving.
