  1. Finely grate the zest of one orange into a mixing bowl.
  2. Juice the zested orange and add its juice to the bowl along with 1 teaspoon honey, 1 teaspoon lemon juice, and 1 tablespoon olive oil.
  3. Peel and finely chop 1/2 inch of fresh ginger root, then crush one small garlic clove.
  4. Add the ginger, garlic, a pinch of salt, and pepper to the dressing bowl and mix well.
  5. Push two sprigs of fresh mint into the dressing to infuse flavor.
  6. Scrub and scrape the carrots (or peel if preferred), then coarsely grate them into the bowl with the dressing.
  7. Peel the remaining two oranges, removing all pith and membrane, and cut them into clean segments.
  8. Remove any seeds from the orange segments and add them to the carrot mixture.
  9. Gently toss all ingredients together to combine.
  10. Cover the bowl and refrigerate for at least 2 hours to allow the flavors to meld.
  11. Before serving, remove and discard the mint sprigs.
