  1. Bring a pot of water to a boil. Blanch the broccoli florets for 2 minutes, then immediately rinse them under cold water to stop the cooking process. Drain well and set aside.
  2. Heat a large skillet or wok over medium heat and coat lightly with cooking spray.
  3. Add the chopped onion, minced garlic, and chopped red bell pepper to the skillet. Sauté for about 10 minutes until softened and fragrant.
  4. Remove the vegetable mixture from the skillet and set aside in a bowl, keeping it warm.
  5. Wipe the skillet clean with a paper towel and coat very lightly with cooking spray again.
  6. Add the cubed chicken breasts to the skillet. Sauté over medium heat for about 8 minutes, stirring occasionally, until the chicken is golden brown and cooked through.
