  2. In a large Dutch oven or pot (at least 6-quart), cook the sausage over medium heat until lightly browned, breaking it up into small pieces.
  3. Add the chopped bell pepper, celery, green onions, and parsley to the pot and sauté in the sausage drippings until the vegetables begin to brown lightly.
  4. Stir in the butter and cook until melted.
