Ingredients

Directions

  1. Preheat the oven to 350&# 194;°F (175ðC).
  2. Mix the chocolate wafer crumbs, 2 tablespoons of sugar, and 3 tablespoons of melted butter together until the texture resembles wet sand.
  3. Press the crumb mixture firmly and evenly into the bottom of a 9-inch springform pan.
  4. Bake the crust for 10 minutes, then remove and allow it to cool while you prepare the filling.
  5. Reduce the oven temperature to 300ðF (150ðC).
  6. In a large mixer bowl, beat 19 oz of softened cream cheese until smooth and creamy.
  7. Gradually add 1 cup of sugar to the cream cheese, beating until the mixture is light and fluffy.
  8. Mix in 1/4 teaspoon of vanilla extract, 1/2 cup of seedless raspberry jam, and 2-4 tablespoons of raspberry liqueur (Chambord).
  9. Beat in 3 eggs one at a time, mixing just until incorporated to avoid overmixing.
  10. Pour the filling over the cooled crust and smooth the top.
  11. Bake until the center is firm but still has a slight jiggle, approximately 1 hour.
  12. Turn off the oven and let the cheesecake cool inside with the door slightly ajar for 30 minutes to prevent cracking.
  13. Remove from the oven and cool completely to room temperature.
  14. Refrigerate for at least 3 hours, or preferably overnight, before slicing and serving.
