Cheesecake Cookies Cyberealm
Description
These Cheesecake Cookies are the perfect handheld dessert, combining the rich, tangy flavor of classic cheesecake with the ease of a bar cookie. The base is a tender, buttery crumb crust made with brown sugar and flour, providing a sturdy foundation for the luscious filling. The filling itself is a smooth blend of cream cheese, sugar, egg, and a hint of lemon juice for brightness. Topped with a sprinkle of the reserved crumb mixture, these bars bake up golden and creamy. They are ideal for potlucks, afternoon tea, or satisfying a sweet tooth without the fuss of a full cheesecake. Make sure to chill them thoroughly before cutting for clean squares.Ingredients
Directions
-
Preheat oven to 350 degrees F (175 degrees C).
-
In a medium bowl, blend together the softened butter, brown sugar, and flour with a fork or pastry blender until the mixture resembles coarse crumbs.
-
Measure out 1 cup of the crumb mixture and set aside for the topping.
-
Press the remaining crumb mixture firmly and evenly into the bottom of an 8x8x2 inch baking dish.
-
Bake the crust for 15 minutes. Remove from oven.
-
While the crust bakes, in a separate large bowl, combine the cream cheese and sugar. Beat with a mixer until smooth and creamy.
-
Beat in the egg, milk, lemon juice, and vanilla extract until thoroughly combined and smooth.
-
Spread the cheesecake filling evenly over the partially baked crust.
-
Sprinkle the reserved 1 cup of crumb mixture evenly over the top of the filling.
-
Return to the oven and bake for 25 minutes, or until the top is lightly golden and the center is set.
-
Allow the bars to cool completely in the pan on a wire rack.
-
Cover and refrigerate for at least 1 hour to firm up before cutting.
-
Cut into 16 squares and serve chilled.
