Description

This American dessert features Fresh or dry Lima beans*. The flavors come together beautifully. A wonderful way to end any meal, especially on special occasions. Simple to make with ingredients you likely already have on hand, this is a recipe you will come back to again and again.

Ingredients

Directions

  1. (small ones are best) 3 c Fresh corn
  2. cut from cob 4 Wild onions or pearl onions Salt to taste Pepper to taste 2 tb Melted bacon fat 2 Pieces smoked ham hock 3 qt Water
  3. Soak beans, if using dry ones, for 3-4 hours.
  4. Bring the water to a boil then add the beans.
  5. Cook at a moderate boil for 10 minutes then add the corn, ham hocks, salt & pepper, and onions.
  6. Reduce heat and cook for 1 hour on a low heat.
  7. Got this one from a friend from grad school.
  8. He is a cultural anthropologist who also happens to be a Cherokee Amerindian.
  9. His passion is cooking and this is a recipe that he assures me is genuinely ethnic to his people in North Carolina.
  10. The changes from the items *'d are his not mine.
  11. The measurements have been converted for us as well.
