  1. Preheat oven to temperature specified on cake mix box.
  2. Prepare lemon cake mix according to package directions and bake in two 9-inch round cake pans.
  3. Allow cakes to cool completely in pans for 10 minutes, then turn out onto wire racks to cool entirely.
  4. In a large bowl, beat together softened cream cheese, confectioners sugar, and 3 tablespoons of Cool Whip until smooth and creamy.
  5. Place one cooled cake layer on a serving plate.
  6. Spread half of the cream cheese mixture evenly over the first cake layer.
  7. Spoon half of the cherry pie filling over the cream cheese layer, spreading it gently to the edges.

  9. Spread the remaining cream cheese mixture over the top of the second cake layer.
  10. Spread the remaining cherry pie filling over the top and sides of the cake, creating a border around the top edge to hold the frosting.
