Ingredients

Directions

  1. Preheat the oven to 300 degrees F (150 degrees C).
  2. Sprinkle the chopped walnuts in a single layer on a baking sheet and toast in the preheated oven for 15 minutes.
  3. Remove the walnuts from the oven and set aside to cool. Increase the oven temperature to 350 degrees F (175 degrees C).
  4. In a medium bowl, sift together the flour, baking powder, baking soda, and salt. Set aside.
  5. In a small bowl, combine the drained sweet cherries and the toasted walnuts.
  6. In the bowl of an electric mixer, cream the softened butter until light and fluffy.
  7. Gradually add the sugar and honey to the butter, beating until the mixture is very light and fluffy.
  8. Add the eggs one at a time, beating well after each addition.
  9. Reduce the mixer speed to low. Alternately add the flour mixture and the fresh orange juice to the butter mixture, beginning and ending with the flour mixture. Reserve 1/4 cup of the flour mixture.
  10. Toss the cherry and walnut mixture with the reserved 1/4 cup of flour mixture to coat, then gently fold into the batter.
  11. Turn the batter into a buttered and floured 9x5x3 inch loaf pan.
  12. Bake in the center of the oven for 1 hour, or until a wooden toothpick inserted into the center comes out clean.
  13. Cool the loaf in the pan for 15 minutes before unmolding onto a wire rack to cool completely.
  14. Wrap the cooled bread tightly in plastic wrap and refrigerate for at least one day before serving for best flavor and texture.
