  1. Preheat the oven to 150&# 194;°C (300ðF / Gas Mark 2) for baking the croutons.
  2. Cut 8 slices of wholemeal bread into circles using a large pastry cutter or glass.
  3. Spread both sides of the bread circles with softened butter and arrange them on a baking sheet.
  4. Bake the bread for 1 hour, or until completely crisp and golden brown. Remove and let cool.
  5. While croutons bake, trim the stalks from the mushrooms to level the caps, then wash and pat them dry.
  6. Heat olive oil in a pan and fry the mushroom caps on both sides until browned. Drain well and season with salt and pepper. Set aside.
  7. In a saucepan, melt butter over medium heat. Add finely chopped onion and fry for 7 minutes until soft.
  8. Chop the reserved mushroom stalks and add them to the pan, cooking for 1-2 more minutes.
  9. Remove from heat. Add cooked chestnuts, breaking them up slightly to create a chunky mixture that holds together.
  10. Season the stuffing with a dash of fresh lemon juice, salt, pepper, and grated nutmeg to taste.
  11. Increase oven temperature to 200ðC (400ðF / Gas Mark 6) or preheat the grill to high.
  12. Place the cooled croutons on a baking sheet or in a shallow casserole dish.
  13. Place one fried mushroom cap, black side up, on each crouton.
  14. Spoon the chestnut stuffing mixture generously on top of each mushroom.
  15. Bake or grill for 10-20 minutes until heated through and the topping is lightly browned.
  16. Garnish with thin slivers of lemon peel and serve immediately.
