  1. Preheat oven to 425&# 194;°F (220°C).
  2. In a large bowl, combine the finely chopped chicken, diced green chilies, finely chopped green onions, shredded sharp cheddar cheese, ground cumin, paprika, garlic salt, hot pepper sauce, and pepper.
  3. Mix the filling ingredients thoroughly until well combined, then cover and chill in the refrigerator until ready to use.
  4. Remove half of the thawed puff pastry sheets from the refrigerator. On a lightly floured surface, roll the pastry into a 9-inch by 12-inch rectangle.
  5. Cut the pastry rectangle into nine smaller rectangular strips.
  6. Place about 2 tablespoons of the chicken filling across the center of each pastry rectangle.
  7. Wet the edges of the pastry with water using a pastry brush or your finger.
  8. Roll the pastry around the filling to enclose it completely.
  9. Crimp the ends of each roll with a fork to seal securely.
  10. Repeat the process with the remaining pastry and filling.
  11. Place the rolls seam-side down on a lightly greased baking sheet.
