  1. Slice 1 onion thinly and set aside for garnish.
  2. Cut the second onion into chunks.
  3. Puree the onion chunks, garlic, and gingerroot into a smooth paste using a blender or food processor. If unavailable, grate the onion and gingerroot finely.
  4. Mix the puree with curry powder, turmeric, and natural yogurt. Season generously with salt and fresh ground pepper.
  5. Coat the chicken thighs evenly with the marinade, ensuring all sides are covered.
  6. Cover the chicken and refrigerate for at least 1 hour, or up to 24 hours for deeper flavor.
  7. Heat oil in a large heavy-bottomed saucepan or flameproof casserole over medium heat.
  8. Add the sliced onion, bay leaves, and green cardamoms. Cook, stirring often, until the onions are deeply browned, about 20 minutes.
  9. Remove half of the browned onions with a slotted spoon and reserve for garnish.
  10. Push the remaining onions to one side of the pan. Add the marinated chicken portions and brown them on all sides. Reserve any marinade juices from the container.
  11. Sprinkle the brown basmati rice into the pan, distributing it between the chicken pieces.
  12. Tuck the cinnamon stick in between the chicken pieces.
  13. Pour the reserved marinade juices into the pan.
  14. Add 3 3/4 cups of water to the pan.
  15. Bring the mixture to a boil, then reduce the heat to low.
  16. Cover the pan tightly and simmer gently for 30-35 minutes, until the rice has absorbed the water and the chicken is tender.
  17. Transfer the biriani to a serving dish or serve directly from the pan.
  18. Sprinkle the reserved browned onions over the top and garnish with fresh coriander.
  19. Serve with lemon wedges on the side for squeezing over the dish before eating.
