Description

This Chicken Broccoli Salad is a refreshing and hearty dish that balances textures beautifully. The chewy bulgur wheat absorbs the savory chicken broth, while the crisp-tender broccoli adds a pop of color and nutrition. A zesty dressing made from fresh lime juice, ginger, and a hint of red pepper flakes ties everything together with a bright, aromatic kick. It&# 226;€™s perfect for a light lunch, a picnic side, or a healthy dinner option. The flavors meld wonderfully when chilled, making it an excellent make-ahead meal for busy weeknights or potlucks.

Ingredients

Directions

  1. Place 1/3 cup uncooked bulgur in a large bowl and pour 2/3 cup boiling water over it. Cover and let stand for 30 to 45 minutes, or until the liquid is fully absorbed. Set aside.
  2. In a medium saucepan, combine 1 teaspoon chicken bouillon granules, 1 clove crushed garlic, and 2 cups boiling water. Bring to a boil over high heat.
  3. Add the skinned chicken breast to the boiling broth. Cover, reduce heat to low, and simmer for 20 minutes, or until the chicken is cooked through and tender.
  4. Remove the chicken from the broth and let it cool enough to handle. Discard the broth.
  5. Once cool, shred or cut the chicken into bite-sized pieces. Combine the chicken with the reserved hydrated bulgur in a large mixing bowl.
  6. Steam the broccoli florets for about 5 minutes, or until they are crisp-tender. Drain well and add to the chicken and bulgur mixture.
  7. Add 2 tablespoons minced green onions, 1 teaspoon lime juice, 1/4 teaspoon pepper, 1/4 teaspoon crushed red pepper flakes, and 1 teaspoon minced gingerroot to the bowl.
  8. Toss all ingredients together until evenly coated with the dressing.
  9. Cover the bowl and refrigerate for 2 to 3 hours to allow the flavors to meld before serving.
