Ingredients

Directions

  1. Preheat your oven to 350°F (175°C).
  2. In a shallow bowl, mix together flour, salt, pepper, and ginger to create a seasoned coating.
  3. Dredge the chicken pieces (breasts, thighs, and drumsticks) thoroughly in the seasoned flour mixture.
  4. Melt the margarine in a large skillet over medium-high heat.
  5. Brown the floured chicken pieces in the skillet until golden on all sides, about 5-7 minutes total.
  6. Remove the browned chicken from the skillet and place it in a large baking dish or casserole.
  7. In the same skillet, add the remaining 2 tablespoons of flour to the drippings and stir to form a paste.
  8. Gradually whisk in the water, beef bouillon, catsup, Worcestershire sauce, and bay leaves until smooth.
  9. Place the whole peeled onions into the baking dish around the chicken.
  10. Pour the gravy mixture evenly over the chicken and onions.
  11. Cover the dish tightly with foil and bake for 45 minutes.
  12. Remove from oven, add the quartered potatoes, carrots, and sautéed mushrooms on top.
  13. Recover and bake for another 35 minutes until vegetables are tender.
  14. Stir in the canned peas and bake uncovered for the final 10 minutes.
