Slow cooking ensures the meat falls off the bone, while the final step of flambing with brandy adds an aromatic, theatrical flair perfect for entertaining.

  1. Wash chicken thoroughly and pat dry with paper towels.
  2. Melt butter in a large frying pan over medium-high heat.
  3. Brown chicken pieces on all sides until golden.
  4. Transfer browned chicken to a crockery pot or slow cooker.
  5. Season chicken generously with salt and pepper.
  6. Pour 1/2 cup of cherry juice into the hot frying pan to deglaze, stirring to loosen browned drippings.
  7. Pour the deglazed pan juices over the chicken in the slow cooker.
  8. Add chili sauce and chicken bouillon cubes (or stock base) to the pot.
  9. Cover and cook on LOW for 6 to 8 hours, or until chicken is tender.
  10. Remove chicken from the pot and keep warm.
  11. Pour the cooking juices into a saucepan and skim off excess fat.
  12. Bring juices to a boil and reduce slightly.
  13. Stir in sherry and the remaining cherry juice.
  14. In a small bowl, combine cornstarch and water to form a slurry.
  15. Stir the cornstarch mixture into the saucepan to thicken the sauce.
  16. Cook until the sauce has thickened, then add the cherries and heat through.
  17. Arrange chicken on a warm serving platter.
  18. Carefully ignite the warmed brandy or cognac in a ladle or heatproof container and flame the sauce.
  19. Spoon the flaming sauce over the chicken and serve immediately.
