Ingredients

Directions

  1. Cut the chicken into serving pieces. In a shallow dish, mix together the flour, chili powder, salt, and pepper.
  2. Coat the chicken pieces thoroughly in the seasoned flour mixture.
  3. Heat the oil in a large Dutch oven or heavy pot over medium-high heat. Brown the chicken on all sides until golden.
  4. Push the browned chicken to one side of the pot. Add the chopped onion, green pepper, and crushed garlic to the empty side.
  5. Sauté the vegetables until they are tender, about 5 minutes.
  6. Stir in the canned tomatoes and chicken broth. Bring the mixture to a boil.
  7. Stir in the uncooked rice. If using okra, add the thawed frozen okra now.
  8. Cover the pot and reduce heat to low. Simmer for 40 minutes, stirring occasionally, until the chicken and rice are tender and most of the liquid is absorbed.
  9. If you did not add okra earlier, add it now. Cover and cook for an additional 10 minutes until the okra is barely tender.
  10. Serve hot, garnished with fresh parsley if desired.
