  1. Rinse the sauerkraut thoroughly under cold water to reduce excess saltiness, then drain well.
  2. Place half of the rinsed sauerkraut into the bottom of a 3.5-quart slow cooker.
  3. Drizzle approximately 1/3 cup of low-calorie Russian salad dressing over the sauerkraut layer.
  4. Place three boned and skinned chicken breast halves on top of the sauerkraut.
  5. Spread 1 tablespoon of prepared mustard evenly over the chicken breasts.
  6. Layer the remaining sauerkraut over the chicken, followed by the remaining chicken breast halves.
  7. Drizzle another 1/3 cup of Russian dressing over the top layer of chicken and sauerkraut.
  8. Cover the slow cooker and set it to the low heat setting.
  9. Cook for 3.5 to 4 hours, or until the chicken is white throughout and tender enough to shred or slice easily.
  10. To serve, spoon portions of the casserole onto 4 or 5 plates.
  11. Sprinkle each serving with 3 to 4 tablespoons of shredded Swiss cheese.
  12. Drizzle about 1 tablespoon of the reserved Russian dressing over each plate.
